Babka is a spongy, brioche-like yeast cake made mainly in Eastern Europe and has the experience of a larege donut. It is traditionally baked for Easter Sunday in Bulgaria, Macedonia, and Albania, and for the major holidays (Christmas, Easter, New Year, Pentecost) in Romania. Traditional babka has some type of fruit filling, especially raisins, and is glazed with a fruit-flavored icing, sometimes with rum added. Modern babka may be chocolate or have a cheese filling.
